For a classic drink, prepare a Rum & Tonic by combining 50ml of white rum with 250ml of tonic water over ice, and garnish with a lime wedge to add am aroma of citrusy brightness.


A classic Rum & Tonic is great for warm afternoons but some people can find that the bitterness of tonic water is overpowering and too bitter for rum. You might think that I'd recommend a rum and tonic to gin drinkers, but in my experience people who like a gin and tonic don't usually appreciate a rum and tonic. In my opinion, I'd keep the tonic water back for the gin.

The warmth of ginger complements the rum’s fruity and aromatic notes, creating a drink that's both vibrant and flavourful. Whilst ginger beer is the more classic mixer for rum, ginger ale can provide an equally refreshing, less fiery, drink for those who find that the heat of ginger beer is too strong. I'd typically recommend a drinking 250ml of good ginger beer with a double white rum, to ensure that the rum is not lost in the fire of the beer.

I prefer drinking rum with freshly squeezed rather than any orange juice out of a bottle or a carton, but if you don't have the time or patience then a bottle is fine. A ratio of around 2:1 rum and orange juice goes well. That's a lower ratio than many other mixers, but this helps the sweetness of the rum balance out the tartness of the orange juice.


If you're looking for a very simple cocktail, combine white rum with orange juice over ice, and add a splash of grenadine for a colourful and flavourful twist. Or, if you're looking for a rum punch mix, add pineapple juice, cranberry juice (and essentially whatever juice takes your fancy), as well as a lot of different rums. Additionally orange juice is a key ingredient in a painkiller, which is one of my favourite cocktails.
